Founded in 1911 as a response to changing milk pricing, Union Star Cheese Factory in Zittau, Wisconsin began when thirteen farmers, led by Henry Metzig, established a cooperative to produce cheese. The company's legacy includes adapting traditions, like Sunday work commitments, and introducing one of the first licensed female cheesemakers, Edna. Now owned by Henry's descendants, Union Star thrives by crafting premium cheeses from locally sourced, high-quality milk.
